Dishwashing in a Commercial Kitchen

In commercial kitchens, dishes are primarily washed using dishwashers. Unlike household dishwashers, commercial machines do not necessarily change the water after each wash cycle. This makes monitoring the water condition and cleaning the machine’s interior surfaces essential to prevent microbial growth.

When pre-washing, selecting the right water temperature is crucial. For example, hot water should be used for removing grease, whereas cold or lukewarm water is recommended for washing protein-rich dishes, such as buttermilk or milk glasses.

Proper Hand Dishwashing Technique

  1. Remove loose debris and food residues from the dishes.

  2. Wash the dishes within an hour or soak them in water with added soaking agents.

  3. Pre-rinse with cold water. Always rinse dishes with cold water, as hot water can cause protein residues to adhere to the surface, creating a breeding ground for microbes.

  4. Wash with warm water and detergent. When washing by hand, enhance cleaning by scrubbing. Ensure all sides of the dish are washed. In a dishwasher, water jets perform this function.

  5. Rinse with hot water. Hot water (above 80 ºC) reduces microbes and speeds up drying.

  6. Allow to dry. Place the dishes in a designated, clean drying area with sufficient space between them. Stack dishes only after they are completely dry.

  7. Clean the workspace. Finally, ensure that the work surfaces and sink remain clean. Also, remember to rinse the dish brush thoroughly!

What is Biofilm?

Microbes can either grow freely or form communities on surfaces. These microbial communities are called biofilms. Biofilm can develop on various surfaces in professional kitchens, such as dishes, countertops, or floors. Removing biofilm from surfaces can be challenging, as it can even withstand disinfectants. The most effective way to prevent biofilm formation is regular mechanical surface cleaning. In particular, careful cleaning and disinfection of equipment and surfaces that come into direct contact with food are crucial to prevent biofilm buildup.
